Mini Sausage Quiches
Ingredients:
¾ cup sausage or chorizo, browned and drained
1/4 cup shredded sharp cheddar cheese
1/4 cup shredded mozzarella cheese
3 eggs, beaten with a pinch of salt and pepper
1 cup half-and-half
¼ cup butter or margarine, melted
½ cup biscuit/baking mix (Use a can or your favorite recipe)
2 tablespoons grated Parmesan cheese
½ teaspoon parsley
Preheat oven to 375 degrees.
In a bowl, combine the sausage and cheeses; divide among 12 greased muffin cups.
In a mixing bowl, combine the remaining ingredients just until blended.
Pour over sausage mixture.
Bake at 375 degrees for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Let stand for 5 minutes before serving.
Should make 1 dozen.
