Beef Empanadas

Ingredients:
1 pound ground beef
1/2 onion, finely chopped
1 Tbsp olive oil
1 tsp butter
2 Tbsp garlic cloves, minced
1/4 tsp ground cumin
1/4 tsp ground cayenne
1/4 tsp ground paprika
1/4 tsp ground chili powder
1/2 tsp season all
salt and pepper to taste
1 cup diced tomatoes
1/4 cup diced chilis
2 Tbsp chopped fresh cilantro (or 3 tsp dried)
2 cans of cresent dough
1 egg, beaten (to brush on top)
1 Tbsp parsley
1 Tbsp water

Directions:

Heat a pan to medium-high heat. Add the olive oil and butter. When the butter is slightly melted, add the onions. When the onions are transparent, add the seasonings and turn the heat down to medium.

Add the ground beef and stir until browned. Drain any grease. Taste the meat and decided if you want to add any additional seasonings.

Stir in the tomatoes and chilis. Cook over medium heat until the tomatoes have reduced. Then, stir in the cilantro and heat through. Remove from heat.

Unroll the croissant dough and put about a tablespoon of meat into the middle of the triangle. Roll it tightly and place the empanadas on a cookie sheet, brush the tops with the beaten egg/parsley and bake in a 400 degree oven for 20 minutes. Serve warm.
